Perpetual spinach is a leaf beet, not a true spinach -- it crops like spinach but stands the heat and cold that make real spinach bolt.

Plain green stems, not coloured

Unlike Swiss chard, the stems stay green or white. That is the quickest way to tell the two apart on the plot.

Pick outer leaves and the plant keeps producing from the centre for months, which is where the "perpetual" comes from.
