Growth Stages

Stage BBCH Notes
Sowing and germination 0 Sow direct in spring as the soil warms, about 1cm deep in rows 30cm apart, into light free-draining soil dug 30cm deep with stones removed and no recent manuring; germination takes 2-3 weeks (RHS).
Thinning and establishment 1 Thin seedlings to about 10cm apart and water regularly during dry weather while young; keep weed-free (RHS).
Root bulking 4 Water only in extended dry spells to avoid root splitting, and mulch in late spring to hold moisture (RHS).
Harvest 4 Roots are ready from mid-autumn through to early spring, and frost improves their sweetness; ease the long slender roots out carefully with a fork as they snap easily (RHS).

Harvest & Storage

When to pick: RHS: roots "usually ready to harvest from mid-autumn", left in the ground through winter into early spring; roots are "long, slender, creamy white" when ready; "frost helps to sweeten the flavour". NC State: roots best harvested "in the late fall and during the winter" of the second growing season; young shoots collected "before the production of the flower" for best flavour. Germination "slow and erratic, taking two or three weeks" (RHS) / "8-10 days" (NC State).

Storage

Best left in the ground and lifted as needed through winter

Plan your Salsify planting

Timing for Salsify follows soil temperature and frost, not the calendar date. The Global vegetable planting calendar explains the method. To work out where it fits in your beds, sketch your plot in the free Garden Layout Planner.

Every growing guide is checked against RHS, USDA Cooperative Extension, and other named horticultural authorities before publishing. How we check our facts.

How this guide is put together

The growing data on this page — sowing windows, pests, diseases, soil and site requirements — comes from named horticultural sources, listed in References below, checked against international horticultural research and extension sources. An automated pipeline assembles that verified data into the page you're reading: it selects which facts to lead with and builds the surrounding prose and layout. It does not invent a date, a source or a number — where a verified value for a field isn't available, the page leaves it out rather than guessing. A person reviews and publishes each page; nothing goes live unverified.
